Beets and nectarines are in season and a delicious combination. Why not put them together in a salad?

Ingredients
8ouncesspring lettuce mix
3roasted beetschopped
1nectarine chopped
1pintblueberries
½can mandarin oranges drained
½cupwalnutstoasted
½cupcroutonsif you’re feelin’ the need for dat crunch!
¼cupHome-made Ranch dressing
Instructions
Heat the oven to 350 degrees. Cut the stems off the beets and wrap each one in aluminum foil. Bake for 30 minutes. Cool before cutting.
Evenly divide the greens between the bowls and layer with the beets, nectarines, blueberries, oranges, walnuts, and croutons. Drizzle with the ranch dressing.
Notes
I like making individual bowls for everyone at the table since the presentation looks so nice this way (and there’s one less bowl to clean up).
