Salad
8cupsarugula and spinach mix
1cupcouscouscooked
½cucumberroughly peeled and diced
¼red onionthinly sliced
2cupswatermelondiced
¼cupsliced almondstoasted
⅓cupfeta cheesecrumbled
Dressing
3tablespoonsolive oil
1tablespoonred wine vinegar
¼teaspoonsalt
⅛teaspoonfresh ground pepper
Instructions
Layer the lettuce, couscous, cucumber, red onion, watermelon, almonds and feta cheese. Whisk the olive oil, red wine vinegar, salt, and pepper together. Pour the dressing over the top of the watermelon salad.
