I had a request for cauliflower pizza crust recently and decided to write an article to show you guys exactly how to make it. In just a few steps, you can have a totally gluten-free pizza without worrying about finding and using gluten-free flour. It tastes great, and bonus, you get to really pack those veggies in without adding a bunch to the top of your pizza. My kids didn't even notice the regular crust had been replaced by a healthier version. If my kids eat my food without complaint, then I'm happy.
How to make cauliflower pizza crust
There are a couple of steps involved in making the crust. This includes making cauliflower rice and combining it with a couple of other pantry items to get it all to stick together.
- Make the cauliflower rice: Cut the cauliflower head into florets and pulse them in a food processor. Lay a kitchen towel or cheesecloth in a medium-sized bowl and put the cauliflower rice in the bowl. Place this in the microwave for 3 minutes or until soft and sufficiently steamed. Let it cool! After it's cooled, use the towel to wring out as much water as possible from the cauliflower rice. You don't want any excess liquid in your crust. *Note* you can also buy pre-made cauliflower rice in the produce section of the grocery store.
- Combine everything together: Place the cauliflower rice in a bowl after wringing out the water, with the eggs, cheese, and seasonings. Mix it all together until a loose dough is formed.
- Make the crust: Pat out the 'dough' to about ¼ inch thickness on the pizza stone or baking sheet. Raise the edges a little so you have something to hold onto while you eat. Halfway through baking, flip the crust over so it can crisp up the bottom. If your crust is too thin, you may not be able to do this. Try it gently before flipping so as not to break it apart.
How to store cauliflower pizza crust
You can store the pre-made dough in the fridge for up to 24 hours. This is handy if you want to prepare dinner the day or morning before you are ready to eat. You can store the baked pizza crust in the refrigerator as well. Put it in an air-tight bag to save space and keep it in there for up to 3 days.
Freeze the baked cauliflower pizza crust for up to 3 months. Make sure to wrap it in plastic wrap and then put it in an air-tight bag to prevent freezer burn.
Variations
There are a few different ways you can vary your pizza crust.
- Add fresh herbs, crushed black pepper, garlic or onion powder, or Italian seasonings to really give the crust some great flavor.
- This will only make one 7 inch pizza, so if you are feeding more than two people, you may want to double the recipe.
Toppings for your pizza
We are talking about a pizza here, right?? It wouldn't be awesome without some great toppings. Here are some ideas for you.
- Sauce: marinara, pesto, BBQ, alfredo, ranch dressing
- Meats: sausage, pepperoni, hamburger, prosciutto, ham, bacon, chicken, salami, chorizo, shrimp, capicola
- Veggies: onions, garlic, bell peppers, artichokes, olives, tomatoes, mushrooms, pineapples, jalapeño, spinach, sun-dried tomatoes, roasted garlic, caramelized onions, peperoncinis, cherry tomatoes, banana peppers, arugula, zucchini
- Herbs: basil, oregano, rosemary, thyme
- Cheese: grated mozzarella, buffalo mozzarella, parmesan, cheddar, asiago, provolone, feta, ricotta, goat, blue cheese
